What a night ✨

On March 8, we had the honor of producing the James Beard Foundation Taste America Dinner in Puerto Rico at Vianda, bringing together chefs, partners, and guests for an unforgettable evening celebrating Puerto Rico’s incredible culinary scene.

Host Chef Francis Guzmán (Vianda) and Guest Chef Sebastián Rosado (Levant) created a beautiful multi-course menu highlighting local ingredients—from carrucho and malanga to coconut and pork—paired with exceptional wines curated by Méndez & Co.

Guests were welcomed with “Erizo del Mar,” a signature cocktail featuring Bravada Vodka, mandarin, and rambutan, setting the tone for a vibrant night of food, wine, and community.

The island’s most iconic celebration marks the official close of Puerto Rico’s Christmas season — a vibrant tradition filled with music, food, art and cultural expression that takes over Old San Juan every January.

In honor of the festivities, Spoon will be taking a little break from Friday, January 16 through Sunday, January 18 to enjoy the party and celebrate our traditions right alongside everyone.

We’ll be back to our regular tour schedule on Monday, refreshed and ready to keep sharing the flavors of Puerto Rico with you.

Pasteles are a Christmas staple in Puerto Rico for a reason.

They are made together, in big batches, with care, patience, and time.

Their roots come from Taíno knowledge of root crops and leaf wrapping, and African traditions of seasoning, communal cooking, and food made to nourish many. Over generations, this became a dish that lives at the center of Puerto Rican Christmas.

Traditionally, the masa is made from a mix of grated green plantains, green bananas, yautía, and sometimes calabaza for color and silkiness. The filling, el relleno, is usually slow-braised pork, but you will also find variations with chicken, beef, or vegetarian options.

Join us this season and experience Puerto Rico through the stories, people, and food that shape it.
