An inside look at the historic Baglio estate we call home in Sicily. 🇮🇹

Tucked within the vineyards of Sicily’s Ragusa province, Baglio Occhipinti
is a seventeenth-century eco-luxury retreat rooted in the heart of the Cerasuolo di Vittoria DOCG wine region.

Originally built as a traditional Sicilian baglio, a historic countryside estate centered around agriculture, gathering, and daily life, the property has been carefully restored to preserve its original stonework, vaulted spaces, and quiet sense of place.

Today, only twelve suites welcome guests into a slower rhythm of Sicily. Organic linens. Fresh fruit waiting in the room. No televisions or minibars, intentionally designed to encourage presence, rest, and connection to the landscape surrounding you.

Days unfold between vineyard lunches, local wines, Baroque towns, and long evenings gathered beneath the Sicilian sky.

This October, it becomes home for our Sicily Vine to Table Soirée.

To understand Sicily, begin with the glass... 🇮🇹

🍷 Frappato
A bright, floral red native to southeastern Sicily, known for wild strawberry, herbs, and freshness shaped by the Mediterranean coast.

🍷 Nero d’Avola
Sicily’s iconic red grape, first cultivated near the town of Avola. Dark fruit, spice, volcanic minerality, and structure define the island’s most celebrated varietal.

🥂 Grillo
A coastal Sicilian white rooted in sea air and sunshine, bringing citrus, salinity, texture, and mineral freshness to the glass.

🍷 Cerasuolo di Vittoria
Sicily’s only DOCG wine. A historic blend of Frappato and Nero d’Avola balancing brightness, elegance, and depth from the vineyards around Vittoria.

These wines are more than varietals. They reflect Sicily’s volcanic landscapes, harvest traditions, and generations of growers preserving the island through the vine.

If you’ve ever wanted to sip native wine in a historic Baglio estate in Sicily, this is your invitation.

When Wine Enthusiast called Madeira the “Jurassic Park” of wine, we immediately understood why. 🇵🇹🍷

The article explored the island’s ancient vineyards, dramatic Atlantic landscapes, and the immense care local producers continue to pour into preserving Madeira’s wine traditions today.

For The Palatum, the article also brought us back to the many ways we’ve experienced Madeira throughout the years, and more recently alongside Tastemakers Chef David Viana and Neilly Robinson. Gathering with travelers around long seafood lunches, historic wine lodges, Atlantic vineyards, and conversations that stretched late into the evening

Some places stay with you because of how closely culture still lives beside the table. Madeira remains one of them.

If you’re looking to experience places this way, visit the link in the comments below to explore our upcoming Palatum Soirées.

A week in southern Spain, lived from an Andalusian hacienda. 🇪🇸

Tucked between Sevilla and Jerez, Hacienda de San Rafael feels less like a hotel and more like a rhythm to settle into. Quiet courtyards. Linen curtains moving with the afternoon breeze. The scent of citrus and jasmine lingering long after breakfast has ended.

Days unfold slowly here. Mornings over coffee beneath the trees. Afternoons returning from mercados and bodegas to shaded gardens and stillness. Evenings gathered around the table as the sky softens into gold.

On Culinary Soul of Andalucía, this becomes our home for the week. A place not simply to stay, but to inhabit.

A Palatum trip is shaped long before you arrive.

It lives in the relationships we build, the places we return to, and the care taken in every detail along the way. From the first welcome to the final farewell, each moment is considered, yet never rushed.

What our guests experience is not something easily assembled on their own. It is something lived, guided, and shared.

Explore our upcoming Soirées and step inside the experience.

There’s a difference between merely tasting a dish and learning how it comes to life 🍝

At Baglio Occhipinti, meals begin long before they reach the table. Broad beans from the garden. Fresh ricotta. Dough shaped by hand, just as it has been for generations.

This is Scaccia Ragusana, and this is how you experience Sicily with The Palatum.

An eco-luxury retreat in southern Sicily where cooking is not a demonstration. It is something you take part in.
