Rajma (Red Kidney beans) and Jeera Rice (Cumin rice)

Rajma
Soak 1/2 cup dry Red kidney beans overnight or 8 hrs minimum. Rinse and drain water.

In a pressure cooker add 1 tbsp butter and 1tsp oil. Next add 1/2tsp cumin seeds and let it crackle. To this add 1 medium sized onion finely chopped, white or red is ok. Sprinkle some salt on it, so it browns fast. To this add ginger garlic green chilli paste (paste of 2 garlic cloves, 1/4inch ginger piece and 1 medium size green chilli). Fry it well until the raw smell goes and next add puree of 1 medium and 1 small tomato. Mix well.

Add in overnight soaked red kidney beans and 2 cups water.

Next add the dry spices. 1/4th tsp turmeric powder, 1 tsp MTR brand garam masala, 1/2tsp cumin powder and 2 tsp corriander powder. Mix all well and add salt to taste.

Pressure cook for about 20 minutes. Cool the pressure cooker and remove lid. Garnish with finely chopped fresh corriander leaves. Can also add 1 tbsp fresh cream but i have not added.

Tempeh with Indian spices

Marinate 150 grams tempeh with any neutral tasting oil, 1/4tsp turmeric powder, chilli powder and salt to taste, 1/4th tsp cumin powder and 1 tsp corriander powder.

Fry in a pan with little oil on medium heat for 5 to 10 minutes until the tempeh is brown and crispy. Enjoy!

Ambe dal (Literally means mango dal and is kind of a refreshing salad from state of Maharashtra, India)

Soak half cup chana dal (split bengal gram) for 4 to 5 hrs. I soaked overnight.
Morning time grind the lentil with 1 green chilli, 1/2inch ginger piece, salt and sugar to taste, juice of half of lime, into coarse paste.

Add finely chopped cilantro into this paste.

Peel and grate one small size green mango and add it into the paste.

Make seasoning of a pinch of aesofatida, 1/4th tsp turmeric, 1/2tsp each of cumin and mustard seeds and pour this over the dal.

Mix all of it well and have it with sliced cucumber. Tastes delicious 😋

Yogurt rice with carrots.

Ingredients for seasoning:

Seasoning of pinch of turmeric , aesofatida pinch, 1 green chilli chopped, 1/2 inch grated ginger, 1/2 tsp cumin seeds, peanuts as much you like, all fried in neutral flavour oil.

2 bowls plain cooked rice. Add salt and sugar to taste, 1 bowl yogurt, lots of fresh chopped corriander, 1 medium sized carrot pealed and finely grated.

Mix all this together and you are ready to go.

Yogurt is great for your digestive system with added nutrition and fiber from carrots.

1. Eyebrow threading place
2. Utility shop where you get aquainted with few local common household brands and products.
3. Spice, lentils and cooking oils. Learn which brand of spices to buy, soaking time of various lentils and more.

Break at tekka market at the drink stalls and get aquainted to few local drinks. Break will be of approx 10 mins. Pay for own drinks.

4. Continue to explore tekka market at local fruit stall and do fruit tasting of some local fruits.
5. Explore vegetable store.
6. Coconut shaving store
7. Tempeh and bean sprout shop.
8. Chia's store where all western produce is avbl.
9. Seafood stall, mutton stall, chicken shop.

Move to Little India Arcade.

10.Visit silver toe ring shop and learn the significance.
11. Sweet shop to find the best samosa in town, fresh paneer and more.
12. Henna store.
13. Handloom store where they sell hand embroidered cotton tunics and we get 20% off. Comfortable and skin friendly material and at same time you are supporting the Indian cottage industry.
14. Household store which sells cushion covers, rugs, blankets and more.
15. Proceed to visit Indian heritage center gift store.
16. Jyoti Store where you can buy Indian pots and pans.
17. Sari shop to checkout silk scrafs and different silk sari's.

End of tour. *** Approx 3 hrs plus. Walking tour.

Lunch at own cost at a South Indian (Gluten free) restaurant to try out some South Indian meals and filter coffee or North Indian restaurant to eat Naan etc.

Amla (Indian gooseberry) digestive candy

700 green amla
500 grams jaggery
1 tsp ginger powder
1/2tsp pepper powder
Salt to taste
1/2tsp rock salt
1 tsp carrom seeds
2 tsp dry mango powder(Amchur)
2 tbsp raw sugar

Steam the amla, cool, deseed and make paste. In a heavy bottom pan, cook the paste until relatively dry and then add jaggery and rest of the ingredients except sugar. Cook till very dry. Cool and make small balls using your palm and roll it into sugar. Store in a glass jar in the fridge. Eat 1 daily after meals.

Amla is high in vitamin C and antioxidant and great for your immunity. Enjoy 😋

Green Sandwich chutney
The quintessential green chutney, most of us Indians grew up with during our childhood 😁 This chutney was a must in most Indian households, during birthday parties and picnics back then.
Try it today. We loved it as kids.

Ingredients:
100 grams mint leaves
80 grams corriander leaves

Corriander leaves must be a little less than mint leaves in quantity.

Jaggery 1 tsp or to taste. Alternatively use any other sweetner.
Salt to taste
1 tbsp coconut shavings
1/2tsp cumin powder
2 to 3 cloves garlic
1/4 th piece of small ginger or to taste.
1/2 to 1 green chilli as per the spice level you like.
1/2 of lime juice.

Grind it into a smooth paste.

To make sandwich. Toast bread. Slather butter on both sides. Then chutney on both sides. Can add cucumber and tomato to it or just have it plain with chutney or chutney cheese sandwich. Any combination tastes yumm. The chutney and butter remains constant here.
