A Taste of Home

Our Private Thai Cooking Class is more than just learning how to cook Thai food.

It is a little journey into my childhood memories.

The recipes I share with our guests come from the food I grew up eating — the dishes my grandmother and my mother taught me, mostly without ever calling it a “lesson.” I simply grew up in the kitchen, watching, helping, tasting, and learning.

Thai food is full of stories. Different regions have different ingredients, aromas, and ways of balancing sweet, sour, salty, spicy, and sometimes bitter flavours. So when I cook with our guests, I don’t just teach them the recipe. I also share the memories and little stories behind the food.

Yesterday was especially sweet.

Our two lovely guests from Australia originally came to stay for just two nights. Then they stayed another two… and another two… and finally decided to stay for seven days because they wanted to spend one more day learning how to cook Thai food with us.

After eating Thai food here every day, they became curious about the flavours — and wanted to take a little piece of that experience home with them.

They were such easy-going, lovely guests, happy simply to enjoy good food, quiet moments, and the little things that make a stay special.

And for me, standing in the kitchen and sharing these recipes feels like passing on something my grandmother and mother gave me long ago.

A little taste of my childhood.
A little piece of home.
And now, a memory we can share together. 🤍

A Simple Way of Living 🌿

Every morning, I wake up early, move my body for 30–40 minutes, take the dogs for a walk, feel the earth beneath my feet, and let nature wake me up.

Then I come home and make my own breakfast — simple, fresh, nourishing food made with local ingredients.

Chicken with turmeric, black pepper & garlic, local vegetables, a boiled egg, sourdough with olive oil and tahini, Greek yogurt, and 100% cacao.

This is how life flows at Pai Na Pai Ta.

We cook with what we have, choose ingredients we know, use simple seasonings, and whenever possible, bring food from our garden, our friends’ gardens, and local organic farmers to our table.

We make our own kombucha, too.
Nothing fancy. Nothing complicated.

Just a slower way of living, eating well, moving our bodies, spending time in nature, and taking care of ourselves — one ordinary day at a time.

I believe good health doesn’t always have to be expensive.

Sometimes, it begins with the simple choices we make every day. 🤎💚🤍🐌

และ “ปาย” ก็เป็นเพียงหนึ่งส่วนเล็กๆ ของเสน่ห์เมืองแห่งขุนเขาแห่งนี้

จากความเขียวชุ่มของฤดูฝน ผู้คนที่ยังใช้ชีวิตอย่างเรียบง่าย
อาหารพื้นถิ่น วัฒนธรรมที่หลากหลาย ไปจนถึงรอยยิ้มและน้ำใจของผู้คน

ถ้ามีโอกาส…ลองผ่าน 1,864 โค้ง แล้วมาสัมผัสแม่ฮ่องสอนด้วยตัวเองนะคะ
บางทีคุณอาจจะตกหลุมรักเมืองเล็กๆ แห่งนี้
เหมือนที่พวกเราตกหลุมรักมาตลอดหลายปีที่ผ่านมา 🐌🌧️

A Little Herb, A Bigger Journey

Today, Pla Salid and I went to meet one of the herbs growing here at Pai Na Pai Ta — tarragon. 🐱

Sometimes, the smallest things remind us of the bigger picture.

Tarragon (Artemisia dracunculus) is a fragrant herb traditionally used in cooking and herbal preparations. Its leaves contain naturally occurring compounds such as polyphenols and essential oils, and scientific studies have explored their antioxidant and other biological properties.

For us, however, it is not about making big health claims.

It is about learning from nature.

How a simple plant can become tea, an ingredient in food, or simply part of a slower and more mindful way of living.

This is what I have always dreamed for Pai Na Pai Ta.

A home where everything grows together — the gardens, the food, the little houses, the people, the ideas, and the stories we share.

And I feel that we are now ready to take another step.

A step toward becoming more than a place to stay.

A place where people can slow down, eat good food, connect with nature, share experiences, learn from one another, and discover simple ways to take better care of themselves and the life around them.

I believe that a meaningful place is never created by one person alone.

So, as Pai Na Pai Ta grows into its next chapter, I am opening the door to people who share this vision — people who have knowledge, skills, ideas, and most importantly, a belief that we can create something good together.

I don’t know exactly what the next chapter will look like yet.

And perhaps that’s the beautiful part.

We will discover it together. 🌱

One plant.
One story.
One step at a time.

Sew Your Own Naturally Dyed Shirt

Spend a slow Sunday in the peaceful countryside of Pai, learning traditional Karen embroidery and simple garment-making with local artisans.

This is more than a sewing class.
It is an invitation to experience the beauty of handmade living, natural materials, and the stories woven into every stitch.

Together we will create a comfortable everyday shirt using naturally dyed cotton blended with bamboo fiber. Along the way, you’ll learn traditional embroidery patterns unique to the Karen community, simple sewing techniques, and hear the stories behind natural dyes, sustainable textiles, and why these traditions continue to matter today.

No previous sewing experience is needed.
