Sourdough left to ferment for 24 hours. Fresh pasta rolled and cut. 🍝 Pizza dough prepped for Mozza. Baguettes out of the oven before most people are awake.

Our pastry kitchen runs quietly behind every HMA restaurant — twice-daily deliveries, every single day. The bread basket you get at the table, the pasta on your plate, the dessert at the end of the meal. All of it made here, from scratch. 🍞✨

It starts with the flour. Caputo, milled in Naples, the one Neapolitan pizza makers have used for over a century. 🇮🇹

From there: water, salt, yeast. Mixed fresh, left to ferment slowly over 48 hours until it develops the kind of flavour and texture you can't rush. Stretched by hand, never rolled, never pressed. 🤌

The base: San Marzano tomatoes, crushed simply, seasoned simply. Fior di latte pulled and torn. Fresh basil. Ingredients that shine on their own. 🍅✨

Ninety seconds in the oven. The cornicione blisters and puffs, the cheese melts just enough, the base stays soft in the middle with a little char underneath. 🔥

That's what La Cucina Di Mamma means at Mozza — knowing which steps you can't skip, and refusing to skip them. Every pizza, every service.

💌 After 10 years of Tomahawks, late nights, and way too many bottles of wine — Cocotte is closing for renovation.

What started as a rotisserie with a dream has turned into a place where the tables are loud, the nights run late, and the regulars feel like family. We're grateful for every single one of you.

Our last service is 30th April. Consider this your excuse to come back every night before we close 😉

Start with a casual lunch by the water. Light, easy, the kind of meal where you're not checking the time. ☀️ Our kitchen keeps it simple during the day. Fresh, unfussy, exactly what you want when you're still in beach mode.

Then the sun starts to drop, and so does the vibe. 🌅

Evening service is a different experience entirely. We're talking proper cuts. Premium steaks cooked right, paired with wines that deserve the attention. The space transforms without trying too hard. Same ocean views, but the energy shifts. More intimate, more refined. 🥩🍷

Our team adjusts with it. Lunch service is breezy and relaxed. Dinner service is polished, attentive, intentional. Both done properly, just calibrated differently.

Victoria's new menu is coming on March 30th — and it's a proper brasserie menu. 🥂

Bone marrow with sourdough and fleur de sel. Beef Bourguignon slow-braised with bacon and glazed onions. Foie Gras Wellington. Ribeye Café de Paris. The brasserie classics Victoria was built for.

Alongside the French mainstays, new pasta and seafood dishes round out the lineup: Truffle Coquillette with crispy bacon and aged Comté, Linguine Arrabbiata Seafood, Seafood Risotto à l'Américaine. 🦞🍝

The kind of menu that makes Bangkok feel a little more like a side street in Paris. 🇫🇷
