in Vientiane was one of those rare, truly exceptional restaurants in the world — and heartbreakingly, it has closed its doors following the sudden passing of its irrepressible chef, Noi.

It was deeply rooted in its place — a generous representation of the cuisine of a country and the personal history of a chef. The food was not only delicious — as recognized by the 50 Best Restaurant awards — it was alive with Noi’s spirit and intention. The restaurant was also a reflection of a partnership — of shared vision, creativity, and warmth. Eating there felt like being welcomed into a friend’s home.

That partnership was between Noi and And they are our friends. We’ve shared meals, wine, bad jokes, and meaningful projects — with many more imagined. To say we are devastated is not hyperbole. For Mick, it is the unthinkable — the breaking of a world.

There’s little comfort in moments like this. Words, prayers, and emojis are inadequate. So what to do?

This is Noi’s legacy now — an immersive journey through Laos and her kitchen, trips to the market, memories of her grandmother and how to create a Lao kitchen. Sometimes you get lucky. You follow up a recommendation from a local friend. It’s been sitting dormant in your brain for months. And when it’s a beautiful day, breeze on the water and the food looks as good as the seemingly impossibly styled photos on the menu, well it’s fantastic.
