Although COVID 19 has restricted our movements it has not restricted our spirit and passion to see our School “Set Standards High’ .
SJS celebrates its 60th Anniversary on January 26, 2021.
What a milestone !
We cannot allow restrictions to stop us celebrating and acknowledging that achievement.
To this end, we have planned several activities leading to this momentous occasion.

First off - a Christmas Curbside Brunch on Saturday November 28, from 10:00 am to 2:00 p m
Tickets on sale from next week at only $100.00
Come get your Pastelle, ham, turkey, Chicken, Stuffing, Desserts and your Sorrel and Ponche de Creme or Gingerbeer;
We have not forgotten the Vegetarians among us, we have you covered.

This event will provide some funding of refurbishment at the School which includes the re-establishment of the Steelband in the School and Sound proofing the Music Room .

Live streaming of events, Memorabilia , an SJS Challenge to include both present and Alumni members , replanting of the Flamboyant trees and establishing a “Wall of Fame”
Other event will be added as the restrictions are lifted
Don't forget our first event is on November 28

Trinidad and Tobago is a multiracial, multicultural country. We fondly refer to it as a "Callaloo country". Why Callaloo you may ask. Picture this.
Callaloo...a dish made from young dasheen/taro leaves, ochro/okra, onion, chive, garlic, pumpkin, pimento, celery, fine thyme, coconut milk and the sometimes added crab or salted pig tail, salt and black pepper. Cooked down and blended to make a soup.

Ask a Trinbagonian what our National dish is and if there is no bias, we would tell you of not one dish but a few dishes like Pigeon Peas Pealau, Roti, Callaloo, Curry crab and dumpling and not forgetting our famous street foods like last week's featured Bake and Shark, Doubles and Corn Soup to name a few.
This week our featured dish is Curry crab and dumplings with yellow sweet potatoes, blue dasheen/taro root, ripe plantain and green fig/bananas.
This is definitely a crab lover's treat and a must have when you visit Tobago, the smaller of the two islands.

One thing you've got to know about the Trinbago experience is the love of food. Not just eating food but the joy of creating something that others fall in love with and you know it's good when they rock back in their seat with a smile and that "I could sleep right here" look on their face.

A favourite in Trinidad is Bake and Shark. Yes! You heard me right. Shark!
This bad boy came straight out of my kitchen today and my customers absolutely loved everything about it.

So if you're not a Trini and you're seeing this, I'm just going to tell you. When the borders open, you need to hop on a plane and come to Trinidad, just to taste this true Trini delight.

Fully loaded Bake and Shark. Mouth watering fried shark in a pillowy soft fried bake (the likes of fried bread) with lettuce, tomatoes, cucumbers, cabbage, carrots, pineapple, (home made honey mustard, garlic sauce, shadon beni sauce) and tomato ketchup. Bon appetite!
