Salwaa's Cape Malay Cooking
From My Kitchen To Yours - keeping our heritage alive! Please share

Try this quick and easy roti recipe if you short of time. Soft and lovely but not flaky. You can easily double or triple this recipe

Makes 6 rotis

Ingredients:
2 cups cake flour / all purpose flour
Pinch of salt
4 tablespoons of oil
1 to 1 1/2 cups boiling water. Start off with one cup first.

Method:
Add the flour and pinch salt in a mixing bowl.
Make a well in the centre and pour in the oil and the boiling water.
Mix with a wooden spoon until combined and mixed through.
Divide the dough into 6 even pieces.
Heat a flat heavy based saucepan over medium to high heat.
Roll the dough one at a time into circles on a lightly oiled surface. Fry the rotis 1- 2 minutes on each side.
Brush pan slightly with oil optional
Serve with your favourite curry.
