Foodie Friday - Ocoee Scoops

Thinking Ocoee Scoops is just for ice cream - uh uh?!?! Oh, you'll find some ice cream, and lots of other sweet treats, but they're serving up more than that!

How about a hot dog - small ones or large ones - with chili, cheese, hot slaw, cole slaw, jalapenos, and various other toppings, or just plain! There's Belgian waffles with fresh fruit and whipped cream, and you'll find fruit cups for a quick and healthy pick-me-up.

Of course, there's ice cream and floats and banana splits . . . seriously, this new Cookie Monster Crunch is just the thing for the kiddoes after a day spent on the water!

Come on out . . . have lunch or just take care of that ice cream craving . . . you know you want one!

If you’ve driven through the South in summertime, chances are you’ve spotted the airy pink blooms of the mimosa tree, or caught a whiff of its sweet, unmistakable scent drifting through the warm air. For many of us, it’s more than a tree—it’s a memory.

Growing up in the country, the mimosa wasn’t just part of the landscape, it was a signal that the day was done. With no streetlights to guide us home, we played until dusk, and when the mimosa leaves began folding up for the night, we knew it was time to head in.

Originally brought to the U.S. in 1785 by French botanist André Michaux, this tough, vase-shaped tree took to the Southern climate like it was made for it. While it’s technically an invasive species, mimosas have earned their place in Southern lore, flourishing where the land has been disturbed and offering a favorite playground for bees, butterflies, and hummingbirds.

Yes, they’re messy. Yes, they’re everywhere. And yes, someone once said “the best time to prune a mimosa is anytime you have a chainsaw.” But we’ll still stop in our tracks when we catch that scent and let it carry us back to barefoot summers and sun-kissed evenings.

Next time you’re in Ocoee Country, keep an eye out (and your nose alert) for this resilient beauty. She may be wild, but she’s part of our story.

Wednesdays are for Water - Gee Creek

Tucked into the U.S. Forest Service - Cherokee National Forest and winding through the rugged Gee Creek Wilderness, this scenic stream offers some of the most authentic wilderness experiences in East Tennessee. Though the wilderness area spans less than 2,500 acres, it packs a punch with dramatic elevation changes, boulder-strewn waters, and a forest that feels untouched by time. Gee Creek cuts a stunning 1,000-foot gulf between Starr Mountain and Chestnut Mountain — a view that’s impossible to miss when traveling up US 411 from Chattanooga.

Follow the creek into the forest and you’ll be rewarded with crystal-clear pools, mossy cliffs, and the peaceful sound of water echoing through the gorge.

There's family-friendly fun, too, as the lower end of Gee Creek flows right through Hiwassee/Ocoee State Park where little explorers can enjoy the Storybook Trail and camp alongside the stream.

Whether you're in search of solitude, scenic hikes, or a place to splash and explore, Gee Creek has something for everyone. Come see what makes this little creek so special!

Tennessee Tuesday - the Tennessee Walking Horse, our state horse!

Meet Copper Basin High School graduate Skylar Nipper, pictured here with one of Tennessee’s most iconic symbols - the Tennessee Walking Horse!

Named the official state horse in 2000, the Tennessee Walking Horse is known for its smooth, natural gaits - the flat-foot walk, running walk, and canter. Originally bred for utility and farm work, this gentle and graceful breed quickly became a favorite for pleasure riding, thanks to its comfortable stride and calm demeanor.

Often mistaken for Clydesdales because of their proud, high-stepping gait, Tennessee Walkers are anything but ordinary. They’re uniquely ours—proudly developed right here in the Volunteer State and the first horse breed to ever be named after a U.S. state!

Standing 14.3 to 17 hands tall and weighing up to 1,200 pounds, these horses are not just beautiful, they're a part of our heritage. Even Tennessee Park Rangers have long relied on them for patrolling park grounds.

Skylar and this proud Walker make a picture-perfect pair, reflecting the strength and grace of Tennessee tradition!

Wednesdays are for Water - Parksville Lake

The waters of Parksville Lake just hit a little differently with a setting sun. Just imagine it - the golden glow over the water as the sun starts dropping out of sight . . . All there is for you to do is just sit back and soak it in.

Tennessee Tuesday - Milk, the official State Beverage of Tennessee!!

Did you know that milk has been Tennessee’s official state beverage since 2009? That’s right! The honor came after a record-breaking year for Tennessee’s dairy industry back in 2007, when nearly 100 million pounds of milk were produced — generating over $202 million in cash receipts for milk and milk products.

Milk isn’t just a delicious treat, although that can't be denied, especially with homemade chocolate chip cookies, but it's also a powerhouse of nutrition:

✅ Builds strong muscles and bones in kids
✅ Helps mend muscles and bones in adults
✅ Supports healthy teeth, hair, skin, and nails

So raise a glass of Tennessee’s official state beverage and toast to good health — and to all the hardworking dairy farmers who help make it possible!
