My last day in Rome and I tried to fit in as much as possible.
The Spanish Steps. The Trevi Fountain. The Vatican Basilica. The Colosseum. In the heat of an Italian summer with what felt like every tourist in Europe alongside me.
It was a lot. It was worth it. My feet have opinions about it.
But the absolute highlight of the day and honestly one of the highlights of the entire trip was the cooking class.
Our instructor Francesco with Holy Pizza was extraordinary. Hands on, personable, passionate about every single thing he was teaching us and completely memorable in the way that only the best guides ever are. We learned to make fresh pasta and gelato from scratch and I now understand things about Italian cooking that no recipe ever could have taught me.
That is the takeaway from Rome for me. Not just the landmarks, as breathtaking as they are. It is the history woven into every street, the architecture that stops you mid step, the food that tastes like it was made specifically for you in that moment. The Roman era left something behind in this city that you genuinely feel when you are standing in it.
