Colorado Springs Bridge We offer duplicate bridge games most days. If you want to learn the game, are just starting out, or are an experienced player, we have a game for you.

Duplicate bridge is the most widely used variation of contract bridge in club and tournament play. It is called duplicate because the same bridge deal (i.e. the specific arrangement of the 52 cards into the four hands) is played at each table and scoring is based on relative performance. In this way, every hand, whether strong or weak, is played in competition with others playing the identical cards, and the element of skill is heightened whilst that of chance is reduced.

Because you asked for it, here is the recipe for Hoppin' John Salad:

Hoppin' John Salad with Molasses Dressing
Bon Appétit | January 2007

Yield: Makes 6 to 8 servings
Total time: 30 minutes

It is said that eating Hoppin' John on New Year's Day will bring good luck. Here's a fresh take on the southern dish.

Ingredients
• 1/4 cup apple cider vinegar
• 1/4 cup mild-flavored (light) molasses
• 1/4 cup olive oil
• 1/4 teaspoon cayenne pepper
• 1 (1-pound) bag frozen black-eyed peas
• 1 1/2 cups 1/2-inch cubes peeled yam (red-skinned sweet potato)
• 2 cups 1/2-inch cubes Andouille sausage (about 12 ounces)
• 1 1/2 cups frozen sliced okra, thawed, patted dry
• 1 cup chopped red onion

Preparation: Whisk first 4 ingredients in small bowl to blend; season with salt and pepper. Cook black-eyed peas and yam in large saucepan of boiling salted water until tender, about 8 minutes. Drain; cool. Place in large bowl. Add Andouille, okra, and onion. Add enough dressing to coat and toss.

We cannot say thank you enough to John Grossmann and Kathy O'Neil for their incredible generosity over the past 10 years. Our Bridge Center would not be the same without your many gifts!

A couple years back Kathy obtained her Doctorate degree and now teaches at the Univ. of Northern Colorado in Greeley. They have just sold their Colorado Springs home and are "officially" moving to Greeley. We hate to say goodbye and know we will see them again but they will be missed.
