My bag and passport are basically always ready to go.

An idea is often different in practice than in its conception.

When I review menus for a program, I read the description and start building a picture in my mind. I imagine the color, the texture, the flavor, and how it will land with the group. Then the dish arrives and sometimes it matches the vision, and sometimes it is nothing like what I expected.

This is why tastings are essential. They show you what the words on a page cannot. You do not taste everything, but you taste the highlights.

You see the presentation. You figure out what needs to shift so the menu works for a wide range of guests.

There are moments when I say, “I like the flavor, but not the way it looks on the plate, can we add color?” or “The texture is off for this group, can we prepare it differently?” Chefs do not take offense. We are collaborating. We share who the guests are, what the group needs, and any dietary details that help them deliver a cohesive experience without endless substitutions.

Tastings are part of the job. They are fun, but yes, you get full fast.

And every planner has had at least one tasting that did not go as planned.
