Pumpkin Energy Balls

Makes about 12–15

Ingredients

* 1 cup old-fashioned oats
* ½ cup pumpkin puree
* ½ cup peanut butter
* ⅓ cup chopped pecans
* 1–2 tablespoons honey or maple syrup (optional, but helps with sweetness and binding)
* ½ teaspoon cinnamon (optional)

Directions

1. Mix the pumpkin puree and peanut butter together.
2. Stir in the oats and chopped pecans.
3. Add honey/maple syrup, cinnamon, and salt if using.
4. Refrigerate the mixture for 20–30 minutes so it firms up.
5. Roll into 1-inch balls.
6. Store covered in the refrigerator for up to 5 days.

2 packages graham crackers
2 sticks butter
1/2 cup sugar
1 cup pecans pieces
Preheat oven to 350 and line a baking sheet with aluminum foil.
Line graham crackers onto the pan as best as you can.
In a small saucepan, add butter and sugar and heat on medium low heat, stirring constantly until sugar is dissolved and mixture begins to boil.
Remove from heat and pour onto graham crackers. Spread evenly with the back of a spoon.
Sprinkle pecans on top.
Bake for 10-12 minutes.

Date Pecan Balls
½ cup butter
¾ cup sugar
8 oz dates, finely chopped
1 cup chopped pecans
1 tsp vanilla
2cups Rice Krispies
Powdered sugar

Directions

1. Melt butter in a pan over medium-low heat.
2. Add sugar and dates. Cook for about 5 minutes, stirring until soft and combined.
3. Remove from heat. Stir in vanilla, pecans, and Rice Krispies.
4. Let cool for a few minutes.
5. Roll mixture into small balls.
6. Roll in powdered sugar.
7. Store in an airtight container.

Makes: About 24–30 balls.

Back-to-School Pecan Pancake Breakfast Muffins

These fluffy pancake muffins are the perfect grab-and-go breakfast for busy school mornings!

Ingredients
2 cups pancake mix
1 cup milk
1 egg
2 tablespoons melted butter
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ cup chopped pecans
2 tablespoons maple syrup

Optional
Maple syrup for drizzling after baking

Instructions
1. Preheat oven to 375°F. Line or lightly grease a 12-cup muffin pan.
2. In a large bowl, whisk together the pancake mix, milk, egg, melted butter, vanilla, cinnamon, and maple syrup until just combined. Do not overmix.
3. Fold in the chopped pecans.
4. Divide the batter evenly among the muffin cups, filling each about ¾ full.
5. Bake for 12–15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Summer + Salad with fruit 🤝
Summer Spinach Salad

INGREDIENTS

Spinach
Strawberries
Blueberries
Pecan Halves
Feta
Honey
Balsamic Vinaigrette

INSTRUCTIONS
Grab a medium or large sized mixing bowl and pour in the spinach.
Next grab a cutting board and slice as many strawberries as you would like. Add the strawberries and blueberries to the salad.
Next add in the pecan halves and feta cheese.
Grab a bowl and combine the balsamic vinaigrette and the honey (4:1 ratio). Might need to microwave for about 30 seconds to get them to fully mix. Pour over the top of the salad.
Serve and enjoy!

Try this refreshing fruit and pecan salsa/dip with cinnamon tortilla chips 😍

Dip/Salsa Recipe
Fruit:
1 nectarine diced
2 mandarin orange fruit cups
2 kiwis diced
1 pineapple fruit cup
1 cup of blueberries
1 cup of chopped cantaloupe
1ish cups of toasted chopped pecans
Add juice of half a lime
Add honey to taste

Chips:
3 large tortillas
Cut into chips (I used a pizza cutter)
Brush the front and back with melted butter
Season with cinnamon
Toss the chips into the air fryer for 8-10 minutes on 400.
