Fiery Coconut Chicken Stew – Brazilian Style with a Tropical Twist

Ingredients:

2 tablespoons olive oil

1.5 lbs boneless, skinless chicken thighs, cut into chunks

1 large onion, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

4 cloves garlic, minced

1 teaspoon grated ginger

1–2 red chilies, finely chopped (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon turmeric

Salt and pepper, to taste

1 can (14 oz) full-fat coconut milk

1/2 cup chicken broth
