I thought I'd share my nutrion experience for others who may need to do some of the same. Due to some recent health challenges, it's been my top priority to keep my insulin levels low, even while at Disney parks! I assured this by monitoring my ketone levels since ketones can not be produced if insulin is high. I've been eating only meat, eggs, some nuts, and veg... no grains, dairy (other than a sprinkling of cheese on a salad or something), sugar (including fruit... I know, avocado, olives, tomatoes, and cucumbers are technically fruits but they're not loaded with fructose and the first two have lots of great fats!), seed oils, or caffeine (other than a little bit of green tea). I have not deviated from this for a month! Here's how I navigated our 3 days in the Disney parks! I am NOT artistic by any stretch but sometimes we like to do Disney animator lead drawings in Disney Club at school. Can you guess who we did this week? I don't think he turned out too bad for a 15 minute session! *I need a proper sketch pad when we do these*
