Meet Blu 61, this week’s !

If you’re a curd nerd in search of a crowd-pleasing blue, let us introduce you to the beauty of boozy blue cheese. Italy’s Blu 61, which is marinated in Raboso Passito (a red dessert wine), is a great example. It’s sweet, creamy, and colorful — thanks to a layer of wine-soaked red cranberries pressed on top of each purple wheel. You can’t serve Blu 61 without turning heads. It looks more like a slice of cake than a piece of cheese.

Blu 61represents the creativity we love in the world of cheesemaking. It’s an Italian blue, but it’s dressed up for a dinner party, which is when we suggest you break out this specialty. On a summer night, after a meal with friends, try serving Blu 61 with a bar of chocolate or a box of truffles. Add a dessert wine, too, like a bottle of Passito or Port.

Blu 61 is made at La Casearia Carpenado in Italy’s Veneto region, where the cheesemaker created it as an anniversary gift for his wife. Aged at least 3 months, this blue develops a dense, moist texture and a taste that might remind you of boozy cherries and cream. The blue notes are subtle. Trust us, if you have friends who aren’t quite ready for Gorgonzola Piccante, Italy’s most famous blue cheese, seek out Blu 6. It’s sumptuous and visually stunning.

We’re thrilled to announce our 2027 British Cheese Odyssey (April 11-18) in partnership with in Massachusetts! Yes, owner Julia Hallman will join us for this tour, along with British cheese educator and author !

I met him back in 2017, and his thinking and purpose shaped the way I built our Cheese Journey to Northern Italy. He was a close friend of Giorgio Cravero and a huge supporter of artisan cheese.
