Most of the time I suggest taking it easy on the first and last day of your vacation. Especially if you're traveling across several time zones.
Your first day is a great day to get settled and gently aquainted with the destination. Booking a tour or activity might be more than your jetlag can handle. Plus, flights are unpredictable and it would be sad to miss or have to reschedule something the very first day.
It's nice to leave your last day more leisurely too. You can revisit your favorite place or activities. Make time to eat your favorite foods and soak in the destination one more time before you leave.
