Another good 🔥 PubsNGrubs: KOOP’S Space Connection — Texas BBQ Done Right 🔥
If you know, you know… and if you don’t, it’s time to fix that.
KOOP’S Space Connection isn’t just barbecue, barbeque, bar b que, BBQ—however you spell it, this is the kind of place that resets your expectations of what smoked meat is supposed to taste like.
I’ve had plates. I’ve had sandwiches. I’ve gone back enough times to stop calling it a try and start calling it a standard.
And for me personally? This might be the best BBQ I’ve ever had. Period.
We’re talking:
- Deep smoke that actually hits
- Bark with real texture and flavor
- Meat that doesn’t need sauce but still plays nice with it
- Portions that feel honest
There’s a difference between good barbecue and dialed in barbecue—and KOOP’S is dialed in.

Got there just before closing, around three. Caught a quieter moment inside.
There’s a small detail in there that stood out to me—a photo on the wall of a local female astronaut from a recent mission. We got to talking about it, and he confirmed what I was thinking… there’s a real space connection tied into this place.
Kind of wild when you think about it—great Texas BBQ sitting just 30 to 40 minutes from Space Center Houston, and somehow those worlds overlap in a spot like this.
Also… quick second on camera for me in there. Barely. But it’s in there.
But here’s where it gets interesting…
This isn’t just about food. This is about direction.
I’ve been tasting across the island, watching how places move, how they serve, how they hit locals, visitors, and cruise crowds—and KOOP’S has worked its way onto my radar as something more than just a stop.
It fits into a bigger vision.

Curated, small group experiences for people who don’t want basic.
Visitors. Locals. Cruise passengers stepping off the ship with a few hours and a willingness to spend for something memorable. People who drink. People who eat well. People who want something more intentional than just finding a place on Google.
That’s where my routes come in:
🍸 /savor/ — for the drink focused crowd
🚶♂️ /sip/ — a shorter 3 stop experience with food and drinks
🛁 /soak/ — a more open, laid back way to experience the island
🌊 (and eventually… drift)
Now imagine this:
A planned route where BBQ like KOOP’S isn’t just a stop—it’s a highlight. A story point. A flavor anchor between experiences and conversations.
Not rushed. Not crowded. Not generic.
Just right.
Galveston is full of history, but the real edge is in how you experience it—and food is one of the fastest ways to connect people to a place.
Cruisers especially are looking for something real in a limited window. Something they can’t get back home. Something worth talking about when they get back on the ship.
That’s the lane.
And KOOP’S fits in it perfectly.
So yeah… this is a shoutout.
But it’s also a bookmark.
