NJ.com just called de floret “pure brilliance” in a new review, high praise for a chef who’s long been one of New Jersey’s most respected. Fifty years ago, before “farm-to-table” was even a phrase, Chef Dennis Foy was already sourcing from small local farms and building menus around what was freshest that day, starting at the Tarragon Tree in 1976. Today, that same philosophy carries through every plate at in Lambertville.

Hunterdon County’s abundance of farms has long made this corner of NJ a magnet for chefs chasing the freshest seasonal ingredients. Dennis’s presence has inspired that pursuit, giving residents and visitors alike an authentic taste of the Garden State.

The restaurant is a true partnership: his wife, Estella Quiñones Foy, runs the front of house and fills the space with her own touch. The artwork on the walls and the bold, fresh floral arrangements on every table are hers.

With only nine tables in the room, seats go fast. Book your table at de floret and experience 50 years of farm-to-table mastery.

A true gem nestled beside the Delaware River

Frenchtown just made national headlines
Travel + Leisure named it America's Best Small Arts +
Culture Town for 2026, and if you know this corner of Hunterdon County, it's no surprise! Frenchtown has long been a haven for painters, sculptors, novelists, and makers of every kind, a place built on the idea that creative people do their best work alongside each other, not in isolation. The Delaware River backdrop doesn't hurt, either.

Between the towpath connecting Frenchtown to the county's other river towns, galleries tucked into old storefronts, and a calendar full of festivals, open studios, and live performances, there's rarely a quiet weekend here. This kind of recognition is well deserved.
