Kitoko Maui: Gourmet Fusion
Founded by former executive pastry chef at Spago Maui, Cole Hinueber, made the bold move during the pandemic to launch his own food truck offering gourmet takes on local foods and pastries. Furloughed in April of 2020 from his executive chef job at Spago, the timing was perfect for Hinueber to venture off on his own and realize his dream of opening his business.
Hinuber describes Kitoko Maui as a Japanese fusion food truck utilizing the freshest ingredients to offer clever takes on the local favorites. Hinueber partnered with Alice Nualnart Nualyong, another pastry chef at Spago, to also create elevated desserts beyond what you'd expect from a food truck. Some favorites of the truck include: Ahi pastrami with kim chee, crispy chicken bentos, and banana bread with salted caramel.
Hinueber finds inspiration in his desire to make beautiful that makes people happy. With vast experience dotting the globe from Australia to France, his refined palette draws inspiration from all of the world while creating familiar takes on local favorites. Hinueber already had business plan that was easily adaptable to the food truck concept and offered a lower barrier to entry with less overhead than opening a brick and mortar bakery or restaurant.
The name Kitoko is personal. It means beautiful in Congo, where Hinueber’s fiancé is from, and drives the intention of his elevated menu.
