Olmo was born from a simple belief: New Haven deserved its own bagel. Not New York. Not Montreal. A third style, built from scratch by a team of fine-dining chefs who pivoted during the pandemic and refused to make just another bagel.

🏆 So, what’s a New Haven-style bagel? Fresh-milled 82% high-extraction flour, never bromated. Steamed instead of boiled for consistency. Seeds applied through a double-proofing process so they stay on the bagel, not in your lap. A 48-hour ferment that builds flavor the slow way. Every choice made in service of one non-negotiable standard — No Bad Bagels. Olmo is a hole-in-the-wall — a world away from the polished big-city bagel shop — and that’s the charm. From a shop that size, the team turns out roughly 1,000 tickets in a single service, mostly sandwiches, organic coffee, and bagels in a bag. The recognition followed. Best of the Fest at NYC BagelFest 2023. Runner-Up in 2022 and 2024. Ten BagelFest medals across four years. Named Best Breakfast in Connecticut in 2024, 2025, and 2026. But the real story isn’t the awards — it’s the team. Olmo runs on a culture where everyone is developed as a leader, where guests are never called customers, and where the first rule is simple: if you don’t know, ask. Every bagel that leaves the shop carries that standard. Olmo is proof that a small team, obsessed with craft and hospitality, can wedge a new city into the national bagel conversation — one bagel at a time.
