Homemade oatmeal and pecan cookies.
3 cups rolled oats, 3/4 cup granulated sugar, 3/4 cup packed light brown sugar, 3/4 cup all purpose flour, 3/4 tsp salt, 1/2 tsp baking soda, 1/2 tsp ground cinnamon, 3/4 cup butter, softened, 1 egg, 2 tbsp milk, 2 tsp vanilla, 1 cup chopped pecans.
Beat butter with mixer in large bowl until smooth. Beat in egg, milk and vanilla until blended(mixture may appear curdled.) Add all other ingredients to butter mixture , stir with spoon until well blended. Drop rounded tablespoons dough 2 inches apart onto lightly greased cookie sheet. Bake 10 to 11 mins until edges are golden brown. Let stand on cookie sheet 2 mins. Transfer to wire rack to cool completely. Makes 3 1/2 dozen.
