The Bartolotta Restaurants is a Milwaukee-based restaurant group owned by brothers Paul and Joe Bartolotta. Their first restaurant, Ristorante Bartolotta, opened in 1993 and today, the group owns and operates 15 restaurants and catering facilities, including four upscale establishments, two upscale casual concepts, a pair of supper clubs, a pizzeria and a lakefront custard stand, as well as three quick-casual restaurants in the Milwaukee airport.

This past Saturday, Director of Culinary & Bartolotta Restaurants Executive Chef Aaron Bickham was awarded the 2025 WCTC - Waukesha County Technical College Outstanding Service Award for his outstanding contributions in advancing technical education.

Aaron’s dedication to inspiring future hospitality professionals was on full display this past year as he led a collaboration between chefs from The Bartolotta Restaurants and students from WCTC to deliver an outstanding four-course dinner with wine pairings, giving students a chance to learn about the planning, preparation and ex*****on of a culinary event while raising money for future scholarships in the WCTC Hospitality, Culinary, Baking and Pastry program.

Our company is immensely proud of Aaron, as we are lucky to witness firsthand how he gives back to the community, and continues to educate, inspire, and grow our culinary team every day.

This past week, our project team from The Commodore - A Bartolotta Restaurant traveled to Las Vegas to attend the 21st Annual Hospitality Design Project Awards for our property’s nomination in the Event Spaces category. It was an absolute honor to be nominated and recognized by Hospitality Design magazine for the carefully curated design of The Commodore. Congratulations to the Jewish Community Center on its 25th Anniversary of the KIDSHARE fundraiser last night! This culinary tasting event brings together local restaurants to raise funds for the children and family programs of the Harry & Rose Samson Family Jewish Community Center. Bartolotta's Lake Park Bistro represented The Bartolotta Restaurants by serving two dishes, a Caramelized Shallot Tartlet and Coq au Riesling.

In honor of last night’s Restaurant Wars episode of Top Chef Season 22, we thought we would throw it back to last season’s challenge that took place at Discovery World!

We are proud of the staff from our restaurants who assisted teams in their challenge to create two individually unique and fully functioning pop-up restaurants, ‘Channel’ and ‘Dos by Deul’.

We had such an amazing time participating in Top Chef Wisconsin last year, and we wish good luck to the chefs who are still competing for the prize this season!

The Bartolotta Restaurants team was honored to travel to Green Bay this week to participate in the first-ever Taste of the Draft event, showcasing the best of Wisconsin Supper Clubs.

Chef Paul Bartolotta was joined by Chef Andrew Zimmern and Chef Mark Bucher to co-host the event, which benefited GENYOUth’s commitment to end student hunger in Wisconsin. Guests were treated to incredible food, photo opportunities with former Green Bay Packers, Miss America, and other notable chefs such as Carla Hall, and a celebration of this year’s NFL Draft in Titletown!

Special thanks to Schreiber Foods for hosting this event and to all who attended, including Anne Sayers of Travel Wisconsin, Missy Hughes of Wisconsin Economic Development Corporation.

Today, as we mark the anniversary of Joe Bartolotta’s passing, we pause with gratitude and love on the impact he made to transform and elevate Milwaukee’s culinary scene.

When Joe and Paul Bartolotta proudly opened their fifth restaurant, Bacchus – A Bartolotta Restaurant, in 2004, this kind of “big city” restaurant was rooted in warmth, elegance, and hospitality. It was a bold step forward for Milwaukee. In 2019, a refresh of the restaurant was the last project Joe and Paul worked on together, and was finalized and launched later that year. This year, we celebrated the restaurant’s 20th anniversary and its enduring place in the city’s heart for next-level dining.

As we reflect on these significant milestones, we remember the lessons that Joe taught us, the memories that keep him with us, and the legacy that we are proud to carry on. We know that Joe would be proud of all we have accomplished. His influence and fingerprint are present every day within The Bartolotta Restaurants, among our family of team members, and in our community.

We know that none of this would have been possible without you, Joe. Thank you for inspiring us to lead with a hospitality heart, to serve with purpose, and to always put people first.

We are thrilled to announce that The Commodore - A Bartolotta Restaurant has been selected as one of the four internationally recognized nominees in the Event Spaces category for the 21st Annual HD Project Awards presented by Hospitality Design magazine, alongside venues from New York and Macao, China.

The 21st annual HD Project Awards recognize excellence in hospitality design, celebrating innovation, functionality, sustainability, and overall impact. This is such an incredible honor and achievement for The Commodore and its meticulously curated design and architectural details, created by the discerning eye of Jay Franke of Jay Franke Design and the architectural expertise of Peter Damsgaard and Groth Design Group.

The winners in all categories will be announced May 6 at the HD Awards Ceremony in Las Vegas.

We were honored to participate in and sponsor Chef Dan Jacob’s ( ) annual fundraiser, Dim Sum Give Sum, to raise money for Kennedy's Disease Association. Chefs from across the country flocked to The Italian Community Center to serve small bites for all to enjoy.
