The Ditty Bag Market & Cafe

As the owner of The Ditty Bag Market and Cafe, a zero waste market and cafe, Jason has been a driving force in the local sustainability movement, helping the community adopt zero waste living through education, innovative products, and advocacy.

The Ditty Bag was born out of Jason’s concern for climate change. He believed that having a store dedicated to sustainable products would help reduce plastic use in the area and inspire others to adopt eco-friendly habits. His business has since had a strong impact, helping customers transition to a zero waste lifestyle while educating them on how everyday products can lower their carbon footprint.

Jason’s passion for extends beyond his business. He has partnered with local organizations, including No Other Book Like This, a local bookstore, to host discussions with authors such as Briget Shirvell, who wrote Parenting in a Crisis. He is also an active member of the Citizens Climate Lobby (CCL), focusing on state level climate action. He has been involved in supporting and writing environmental legislation, including House Bill 5004, which addresses climate policy in Connecticut.

He also founded the Earth Day Expo, an annual event featuring 70 vendors, student panel discussions, WSHU radio and vegan food trucks. This event continues to expand, bringing together businesses, activists, and residents to inspire collective action. This year's event is at the Groton Public Library from 11-4 on Saturday, April 26th.

"I'm originally from Idaho. I have been in the Mystic CT area since 1989 - when I was in the US Navy attached to the USS Fulton (AS-11), a submarine tender. I was a Mess Management Specialist (cook) while I served. After getting out of the U.S. Navy, I stayed in the area and stayed with cooking while I looked for what I wanted in life. In that time I worked in diners, seafood, BBQ, casinos, private golf courses, schools, hospitals, senior living and high end catering. In the 30+ years of doing that, I fell in love with cooking. The smells, the plating, the constant evolution of the industry. So in May of 2023, I finally decided to put all that experience into my business and cook for others in a vision that not only served me, but elevated your experience." -Shawn Little

Cheffing It Up is available for small parties & gatherings like romantic dates, anniversaries, bachelor/bachelorette parties, wedding day brunch, birthday parties, and other intimate gatherings. Each service is available at your venue in the local Mystic area. Location must have a working oven.

We HOP everyone had a great time today at Easter Trunk Hop 2025- Mystic, CT in Downtown Mystic CT. We cannot thank the businesses, volunteers, and public enough for making this brand new event a GREAT success!
The Easter Bunny is at home resting for his big day tomorrow!
Thank you to Seaport Marine for allowing Greater Mystic Chamber of Commerce to hold this event in their parking lot that turned out to be the perfect spot! We will see everyone next year!

Martine Fairbairn
The Wallasey

Martine and her husband, Geoff, have long shared a love for Mystic, CT. Geoff discovered the area about 12 years ago when he started docking his boat here. When he introduced Martine to Mystic, she immediately fell in love with its charm, coastal beauty, and welcoming atmosphere. That connection to the area grew even stronger when the couple established The Wallasey, a sophisticated and historic waterfront property at 1 Noank Road, which they transformed into an upscale Airbnb in Downtown Mystic CT .

As a talented interior designer, Martine has worked alongside Geoff, a long time high end residential builder, combining their expertise in design and construction to create inviting and livable spaces. Their passion for hospitality naturally extended into the development of The Wallasey, where guests can experience an elegant retreat in the heart of Mystic.

Martine’s dedication to service extends far beyond Mystic. For 15 years, she served as founder and chairman of The Cornerstone Project, a non-profit organization dedicated to supporting the development and sustainability of a school and orphanage in Western Kenya. Though she recently stepped down as chair, she remains actively involved in fundraising efforts and plans to visit the school this June.

When asked what makes Mystic feel like home, Martine reflected on her upbringing along the Gulf Coast of Florida’s Apalachicola Bay and the southwest of France’s Arcachon Basin—both regions renowned for their oysters and seafood. The salty air and shellfish culture evoke a deep nostalgia for her. Meanwhile, Geoff’s family history is steeped in maritime tradition, with generations working for the Cunard Steamship Line. Their shared appreciation for coastal living made Mystic the perfect place to settle.
