Every August, agave harvest season begins in Oaxaca, the region where more than 85% of Mexico’s mezcal is produced. Mature agaves, often a decade or more in the making, are dug up by hand and roasted in underground pits, imparting mezcal’s signature smoky character. The cooked hearts (piñas) are then crushed with a tahona, fermented with wild yeasts, and distilled in copper or clay stills using time-honored methods passed down through generations. With over 30 agave species in use, each bottle captures the biodiversity, terrain, and craft of its origin.⁠
