Few names carry more weight in the world of food than Paul Bocuse.
Born in Collonges-au-Mont-d'Or, just outside Lyon, Monsieur Paul, as he was affectionately known, became one of the most celebrated chefs in history. Dubbed "the pope of gastronomy," his restaurant L'Auberge du Pont de Collonges held its three Michelin stars for a record 55 years.
A pioneer of nouvelle cuisine, Bocuse championed fresh, high-quality ingredients, but never lost sight of what truly great cooking means. In his own words: "Good cooking is when you lift the lid, it steams, it smells good, and you can help yourself to seconds."
On our tours through Lyon, dining in the legacy of Monsieur Paul is always a moment our guests remember long after the last glass is poured.
