Jalapeño Popper Egg Rolls! • 3-4 jalapeños • 1 8oz block cream cheese • 1.5 cups shredded cheddar cheese • 1/2lb bacon • salt + pepper • egg roll wrappers • raspberry chipotle sauce - put your cream cheese in a bowl and set to the side so it can come to room temp. Then dice your jalapeños. Slice your bacon into small pieces and fry until done. While the bacon is frying, shred your cheese if needed. When the bacon is done, add jalapeños, bacon, and cheese into your cream cheese bowl. Season with salt and pepper to taste once mixed add 2 to 3 tablespoons of the cream cheese mixture to one egg roll, wrapper wet the edges of the eggroll wrapper and fold the egg roll over the mixture. Repeat until you have used all of your mixture. This should make about 10 a rolls. Once you’re done wrapping your eggrolls, set them in the freezer to firm while your frying oil heats up. When the oil reaches 375° fry your egg rolls until they are golden brown. When done, slice your egg rolls diagonally and plate them with the raspberry chipotle sauce for dipping.ENJOY!
