Rhubarb Lemon Yogurt Loaf 🍋🍃
Who else loves a moist and tangy loaf? React if you want to try this delicious yogurt twist!
Ingredients:
* 1 ½ cups all-purpose flour
* 1 teaspoon baking powder
* ½ teaspoon baking soda
* ¼ teaspoon salt
* 1 cup granulated sugar
* 2 large eggs
* ½ cup vegetable oil
* 1 teaspoon vanilla extract
* 1 cup plain yogurt
* 1 ¼ cups chopped rhubarb
* Zest of 1 lemon
* Juice of 1 lemon
For the glaze:
* 1 cup powdered sugar
* 2 tablespoons lemon juice
Instructions:
1️⃣ Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2️⃣ In a bowl, whisk together flour, baking powder, baking soda, and salt.
3️⃣ In a separate bowl, beat sugar and eggs until combined.
4️⃣ Add oil, vanilla extract, yogurt, lemon zest, and lemon juice to the egg mixture and mix well.
5️⃣ Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6️⃣ Fold in chopped rhubarb gently.
7️⃣ Pour batter into prepared pan and smooth the top.
8️⃣ Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
9️⃣ Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
🔟 Mix powdered sugar and lemon juice to make the glaze and drizzle over the cooled loaf.
