This famous Nice street food is made with just 4 simple ingredients: chickpea flour, water, olive oil and salt. These simple ingredients become one of the most iconic foods in Nice.

So, what exactly is Socca?

Socca is a thin, crispy chickpea pancake that has been part of Nice’s food culture for generations. It’s traditionally cooked on a large copper plate in a very hot, preferably wood-fired oven. The high heat is what gives it that perfect contrast: crispy and slightly charred on the outside, while still soft and tender inside.

What are anticuchos made of?

Most tourists are shocked when they find out what anticuchos are really made of… 👀

Yes, beef heart 😲

But that wasn’t the original recipe. Centuries ago, anticuchos were made with llama meat. During the colonial period, enslaved Africans were often given the leftover parts of the cow, including the heart.

They transformed those simple ingredients into a flavorful dish by marinating the meat overnight with ají panca, garlic, cumin, salt, pepper, and other spices before grilling it over charcoal.

Today, anticuchos are a must-try in Lima and a reminder that some of the world’s best street foods come with the most unexpected stories.

There's a walk-up window on Calle Ocho with no seats, just a line and a shot of Cuban coffee strong enough to reset your whole afternoon.

That's one stop on our Little Havana food tour. We start at the Bay of Pigs Monument, duck into a cigar factory to watch master rollers work, and eat our way down the block: guava pastelitos still warm, ham croquetas, a pressed Cuban sandwich that ruins every other version you've had.

Then we sit down for ropa vieja, moros, and maduros before our secret dish makes an appearance. You won't know what it is until it's in front of you.

We end where the neighborhood actually lives: Domino Park, where the click of tiles never really stops.
