Aperol Spritz
Is it for you?
Aperol Spritz is a drink that will either captivate you instantly, repel you entirely, or slowly but surely win you over. My first encounter with it was on a food tour in Rome a decade ago, and I wasn't entirely sure what to make of it. That initial sip — a vivid, bright orange liquid — sends a wave of bitterness to the back of the tongue, leaving your brain scrambling to make sense of the flavour. Is it sweet? Is it bitter? Faintly sour, perhaps? All three at once.
The second sip, however, is a revelation. The sweetness begins to emerge, softening the bitterness into something altogether more inviting, and before long the glass is empty and another has arrived without you even asking.
In Italy, the Aperol Spritz is woven into the rhythm of daily life. As the working day winds down, people spill out into the piazzas, glass in hand, settling into that unhurried hour between the office and the dinner table. This simple pre-dinner ritual has since travelled far beyond Italian borders — you'll find it gracing brunch menus, garden tables, and afternoon terraces around the world, particularly as the days grow longer and warmer.
INGREDIENTS
3 fluid ounces Aperol
3 fluid ounces Prosecco
1 fluid ounces soda water
3 ice cubes
1 orange slice, to garnish
STEPS
1 Fill the glass: Fill a large wine glass generously with 3 ice cubes.
2 Add Prosecco: Pour in 3 fluid ounces Prosecco, filling the glass about halfway.
3 Add Aperol: Pour in 3 fluid ounces Aperol. You'll see that beautiful deep orange colour bloom through the glass.
4 Top with soda: Add a splash of 1 fluid ounces soda water to finish — this lifts the drink and adds a little extra fizz.
5 Garnish and serve: Give the drink a gentle stir, then garnish with 1 orange slice, to garnish. Serve immediately.
