Slow Cooker Thai Peanut Pork
Tender Pork in a Creamy Thai Peanut Sauce
Ingredients:
2 pounds pork shoulder or pork loin
1 cup peanut butter
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons brown sugar
3 cloves garlic, minced
1 tablespoon grated ginger
1 tablespoon sriracha sauce (optional for heat)
1/4 cup water
1/4 cup chopped peanuts (for garnish)
1 tablespoon chopped cilantro (for garnish)
Directions:
Place the pork shoulder in the slow cooker.
In a bowl, mix together peanut butter, soy sauce, rice vinegar, brown sugar, garlic, ginger, sriracha sauce (if using), and water.
Pour the peanut sauce over the pork in the slow cooker.
Cover and cook on low for 6-8 hours, or until the pork is tender and easily shreds with a fork.
Once done, shred the pork using two forks and stir it into the sauce.
Serve the pork over rice, noodles, or with steamed vegetables. Garnish with chopped peanuts and cilantro.
