Cetti Mangano, founder of Italian Insights and Italian Insights Tour, was born and raised in Palermo, Sicily and studied at the Università Orientale in Naples, Italy where she worked her way through school as a representative for an international travel company. Cetti brings an invaluable perspective to anyone wanting to learn more about Italy or to help bridge the differences between American and Italian cultures. After living and teaching for over twenty years between the United States and Italy, she has learned to tailor her approach to accommodate all needs. Chiacchiere di Carnevale are a crispy sweet offered during Carnevale (Mardi Gras or Fat Tuesday). You may have tasted them by another name such as: "Frappe" or "Cenci" or "Crostoli". They are a Carnevale favorite by any name!

Try this recipe to bring a bit of Italian Carnevale to your home:

250 gr flour
50 gr sugar
2 eggs
25 gr melted butter
a pinch of salt
a small glass of Marsala wine
confectionery sugar to sprinkle

1/2 gallon corn oil for frying

Mix all ingredients and form a soft ball. Divide dough
in four parts and roll into a 1/4" thick layer.
Cut in 1" by 1.5" strips, add a short a center cut lengthwise, and deep-fry in very hot oil.
Cool down and dry on paper towels
Sprinkle with confectionery sugar and serve!
I like to serve Chiacchiere with Neapolitan chocolate sauce (sanguinaccio). Contact me if you need the recipe.

Carnevale
Is approaching quickly! Italy is rich in its carnevale (or Mardi Gras) tradition and celebrates with floats, regional masks, and festivals throughout the country. Fat Tuesday is only the last day of the celebration. Let's start exploring this exciting week by visiting Piemonte's Sagre and festivals.

Gnocchi:
- 2 potatoes
- 2 cups of flour

Step 1: Bring a large pot of salted water to a boil. Peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a fork or potato masher.

Step 2: Combine 1 cup mashed potato and flour in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into half-inch pieces.

Step 3: Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and serve.

We dressed the gnocchi with tomato sauce but you can use pesto sauce or blue cheese sauce. Whatever you use, it will be.... delicious!

The Dolomites are a mountain range located in northeastern Italy. They form a part of the Southern Limestone Alps and extend from the River Adige in the west to the Piave Valley in the east. The northern and southern borders are defined by the Puster Valley and the Sugana Valley.
