Day 9: Discovering the traditional palm sugar-making process in Tri Ton, An Giang 🌴

Some local specialties are not just meant to be tasted. They carry the story of the people and the land where they are made.

To collect palm nectar, Khmer farmers climb dozens, sometimes even hundreds of palm trees every day, reaching heights of 10–15 meters. The trunks are smooth, and there is almost no protective equipment.

They carry only a small knife, bottles tied around their bodies to collect the nectar, and their bare hands to hold firmly onto the tree as they climb.

Once they reach the top, they collect the nectar drop by drop directly from the palm flowers. It is a physically demanding job that requires great strength and patience. If the nectar spills, hours of work can be lost.

The fresh nectar is then traditionally cooked over a wood fire. No additives, no preservatives, just the natural sweetness and distinctive aroma of the palm.

It is also a story of Khmer culture, traditional craftsmanship, and the perseverance of local people in the Tri Ton – Tinh Bien area.
