Meet Ms. Xam, an incredible woman who creates beautiful artwork using only her toes and mouth. Despite her physical limitations, she earns a living through her talent and perseverance.

The Mekong Delta Bánh Xèo is more than just a pancake, it’s a crunchy, golden slice of countryside life.

🌾 What makes it special?
Unlike the smaller central-style Bánh Xèo, the Mekong Delta version is big, thin, and crispy, often made in wide iron pans over open fires. It gets its signature yellow hue from turmeric and its fragrance from coconut milk mixed into the batter.

🍤 What’s inside?
Shrimp freshly caught from the river, mung beans, bean sprouts, slices of pork belly, all wrapped in a crackling shell of rice flour batter. In some rural areas, locals even add coconut stem or wild herbs picked from the garden.

🌿 How do you eat it?
The real charm lies in the way it’s eaten, wrapped in lettuce or mustard leaves, topped with fresh herbs, and dipped in sweet-sour nước chấm (fish sauce with chili and lime). Some homes even prepare a fermented fish sauce (mắm nêm) for a stronger flavor- but rare 😀

💚 Why it’s loved?
Bánh Xèo in the Mekong isn’t just food. It’s a social meal – best shared with family or guests, cooked fresh over wood fires, and eaten while chatting in the breeze under a fruit tree.
