Every street corner and alley in this peaceful city offers an array of unique and flavorful dishes that embody the essence of Hue's gastronomic culture.
Once the capital of the Nguyen Dynasty, is the place where the country's cultural quintessence converges. Therefore, Hue cuisine was also formed on the foundation of Hue folk cuisine, combined with sophistication, high class of the royal family and exchange and influence of other cuisines, especially Chinese cuisine and French cuisine. Hue gastronomie takes the crown because it always expresses sophistication, elegance, nobility, and charm. And Hue is truly a foodie's paradise.
One of my favorite dishes is Banh Canh Nam Pho - a traditional street food from special noodles of Nam Pho village, Hue city. Banh Canh Nam Pho is cooked from rice flour and tapioca flour in the ratio of "3 rice - 1 tapioca", combied with soup of boiled shrimp water, fresh crab, stewed bones. All are cleaned, crushed, made into small balls and cooked into a smooth mixture. When serving, add a little spicy green chili fish sauce for a delicious taste.
