So what exactly is CEVICHE?

One of Latin America’s freshest dishes — raw fish or seafood marinated in fresh lime juice, usually mixed with onion, cilantro, chilli and salt.

The lime changes the proteins in the fish, giving it that firm, “cooked” texture without using heat. Ceviche is especially popular across Central America, including Guatemala, where it’s enjoyed as a fresh coastal dish with its own local twist.

Fresh, citrusy, spicy and absolutely perfect on a hot day.

And yes… once you start eating it, stopping is the difficult part.

New one for me!! So small. Unlike there cousins.

Sugar apple (Annona squamosa) is a tropical fruit with a green, bumpy skin made up of small segments. When ripe, it softens and opens slightly to reveal sweet, creamy white flesh with black seeds. The flavor is often described as a mix of vanilla, banana, pear, and pineapple.

A few nutmegs picked just in time! Nutmeg grows inside a fruit, with the beautiful red mace wrapped around the seed—two spices from one fruit.

Our coffee is being roasted, and the turmeric, chillies, herbs and spices are all growing here too. From the soil to the cup and kitchen—nearly everything starts right here.
