Halloween weekend calls for candlelight and old stone walls. When your couple wants a wedding that comes alive after dark, these are the five settings we'd put in front of them.

Lismore Castle, Ireland (): the entire castle, high above the River Blackwater, reserved for your couple, with rooms for up to 27 guests.

Villa Pliniana, Lake Como (): a villa built in 1573 on an inlet of the lake, with a private dock so guests can arrive by boat.

Castello di Vicarello, Tuscany (): a 13th-century castle in the Maremma hills, with ceremonies held across the estate.

Frost on the windows at Bergdorf's, the smell of pine drifting out of a hotel lobby and all of Manhattan glowing a little brighter after dark.

The best seat for Christmas in New York has always been a good suite, and I have seven I'd book this year.

They run from Tribeca to a fireside suite on the Upper East Side, with the Nutcracker, the tree at Rockefeller Center and the windows along Fifth Avenue all close by.

A little advice from me: the suites worth having in December are spoken for early, often before the leaves have finished falling.

The best family trips I plan have two vacations running at once, and Four Seasons Resort Hualālai on Hawaiʻi Island is built for exactly that.

The little ones, ages 5 to 12, have Kids For All Seasons, which is complimentary and runs every day from 8 to 5.

The older ones, ages 9 to 17, can join Camp Manitou, a Maine summer camp founded in 1947 that brings its program here over spring break, summer and the holidays. They explore lava tubes and secret beaches, snorkel Kealakekua Bay and head up Mauna Kea after dark to see the stars.

Meanwhile, the two of you get long lunches, a quiet pool at sunset and dinner by torchlight.

What I'd tell you about travel if you asked me at dinner.

The name on the door sets an expectation. The stay itself comes down to one property: who runs it, how the rooms sit on the land, and what the staff remembers about you by the second morning.

I've walked through enough hotels under the same flag to know how much they can vary from one to the next, so I choose the hotel itself, every time. It's what I would want someone to do for me.

If I were building The 50 Best Hotel list, these properties would be on it. None of them are in a city, and every one of them is worth the extra flight.

Awasi Patagonia, Chile: Every villa comes with its own private guide and vehicle, facing the peaks of Torres del Paine.

Singita Kwitonda Lodge, Rwanda: You wake up on the edge of Volcanoes National Park and spend the morning trekking to sit with mountain gorillas.
