Chips and cheese are good 🙌 Chips, cheese and chakalaka? That’s next-level lekker 😍 Add a cool yoghurt drizzle and you’ve got a plate loaded with South African flavour, top to bottom ✨
🍅 INGREDIENTS
Chakalaka:
30 ml (2 Tbsp) sunflower oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 red pepper, diced
1 carrot, grated
10 ml (2 tsp) curry powder
5 ml (1 tsp) paprika
Pinch of chilli flakes (to taste)
1 x 410 g tin chopped tomatoes
1 x 410 g tin baked beans
Sea salt and black pepper, to taste
Loaded Fries:
1 kg frozen potato fries
200 g Fair Cape Cheddar, grated
125 ml (½ cup) Fair Cape Plain Yoghurt
Juice of ½ a lemon
Pinch of salt
Spring onion, thinly sliced, to garnish
Fresh coriander, roughly chopped, to garnish
🍟 METHOD
1. Preheat the oven and bake the fries according to packet instructions until golden and crisp.
2. Meanwhile, make the chakalaka: heat the sunflower oil in a saucepan over medium heat and sauté the onion and garlic until soft and translucent.
3. Add the red pepper and carrot and cook for 3–4 minutes, stirring occasionally.
4. Stir in the curry powder, paprika and chilli flakes and cook for 1 minute until fragrant.
5. Add the chopped tomatoes and baked beans, season with salt and pepper, and simmer for 12–15 minutes, stirring occasionally, until thickened. Set aside and keep warm.
6. In a small bowl, whisk together the Fair Cape Plain Yoghurt, lemon juice and a pinch of salt to make the yoghurt drizzle.
7. Once the fries are cooked, transfer to an ovenproof platter or tray and scatter over the grated Fair Cape Cheddar.
8. Return to the oven for 3–4 minutes until the cheese has melted.
9. Spoon the warm chakalaka generously over the cheesy fries.
10. Drizzle with the yoghurt mixture and scatter over the spring onion and coriander.
11. Serve immediately while hot.
