This time, they’re featuring Uffe Deichmann of Poppelvej Wines. Originally from Denmark and now crafting small-batch wines in McLaren Vale, Uffe sources from sustainable vineyards across the Adelaide Hills and McLaren Vale. His approach is all about minimal intervention - wild fermentation, no additives, and little to no sulphur.
