The Chudail Trail heads out past the last lights into a desert thick with tales of witches, outposts nobody would sleep in, and whatever is said to walk the old caravan road. Sundowners here are taken on top of a rock. Somebody has carried a bar up it, which seems unreasonable until the gin arrives. Below, the Jawai dam turns copper, crocodiles lie on the mud like luggage nobody has claimed, and waterbirds come in low in long, untidy lines. Nothing out here is fenced: not the wildlife, not the villages, not you. It is the least zoo-like place in India to go looking for a spotted coat, and on a good evening you forget you were looking.

Start early, while the hills are still blue. A guide walks you up through a gorge to Somsagar, a lake dammed in 1598 and largely left alone since, where breakfast is unpacked on slabs of marble worn smooth by four centuries of weather. Nobody else comes. By the time you are down again the main pool has the sun on it, and the only decision left in the day is which patch of shade to read in. Dinner is by candlelight under a stone chhatri, and it is not to be hurried.

Breakfast can wait. From the balcony the lake is going through its morning routine: a rowing boat crossing in no hurry at all, temple bells carrying over from the old city, a kingfisher working the shallows as if it had a quota. Below, someone is watering the guava garden. Udaipur gets called the Venice of the East, mostly by people who have not been to Venice. This is quieter, warmer, and nobody is trying to sell you a gondola.

Porto makes you climb for everything.
 The view from the Clérigos tower, the lunch table, the plunge pool level with the Dom Luís I bridge: all of it sits at the top of a hill.

Nine in the evening and still broad daylight — spring this far south hands you hours nobody asked for. You’ve walked further than you meant to, watched a condor do almost nothing impressively, and returned with mud on everything you own. There’s a hot tub facing mountains that have gone pink, and a guide at the bar arguing cheerfully about tomorrow’s weather. Out here the forecast is a rumour and the plan changes daily. That, it turns out, is the luxury.

Late afternoon, and the Andes have gone pink behind the rows. Somebody opens a Torrontés that has never left the province and arguably never should. Dinner is an hour off, so there’s time for the sauna, or the bicycle, or simply the chair you’re already in. W**e country at its most domestic: no marble atrium, no lanyard tour — a family who make some of Argentina’s most interesting w**e, and a spare room with your name on it.

Six in the morning on the pampa, mist still lying in the paddocks. Somewhere a gaucho is already up, whistling at a c**t that has decided not to listen. By noon you’ll be out in the grass; by dusk there’ll be an asado going and a fire nobody built in a hurry. San Antonio de Areco, up the road, has been doing this — silverwork, saddles, tall stories — for two centuries and sees no reason to stop.
