Our morning in Assisi gave the journey a quieter rhythm.

A guided walk through the medieval city, its stone streets and historic architecture offered time to enjoy another side of Umbria before we returned to the region’s vineyards later in the day.

A culinary journey still needs moments where the place itself takes centre stage.

After the morning truffle hunt, we continued to Montalcino for lunch and to visit the town and Brunello di Montalcino w**e tasting at Podere Casisano.

It was a wonderful change of pace within the same day: from exploring the countryside to understanding what happens in the vineyard and cellar. Two very different Tuscan traditions, both experienced at their source.

In the Tuscan countryside, in our own villa, we returned to the kitchen for a morning of fresh pasta making.

Together we prepared tagliatelle, lasagna sheets and ravioli, then sat down to enjoy what we had made, accompanied by a Chianti Classico tasting.

These are some of my favourite moments on a tour: everyone participates, the atmosphere is relaxed, and by lunchtime the lesson has become the meal.

We ended our Tuscan day among the vineyards at Tenuta Torciano, with dinner and a w**e tasting after a morning of cooking and an afternoon in San Gimignano.

It was a relaxed finish to the day: local w**e, food, countryside and time around the table. Sometimes the setting says everything that needs to be said.

After our cooking morning, we traded the kitchen for the medieval streets of San Gimignano.

A guided walk through its piazzas, towers and historic centre gave the day a completely different rhythm and a chance to enjoy Tuscany beyond the table.

Food may lead the journey, but the places surrounding it are every bit as important.

Our time in Modena began at Mercato Albinelli and continued through the historic centre, Piazza Grande and the Ghirlandina.

Markets are always a favourite part of culinary travel for me because they connect the famous products of a region with everyday life: what is seasonal, what local people are buying and how food sits naturally within the city around it.

In Reggio Emilia, we visited a traditional acetaia to discover how Traditional Balsamic Vinegar develops over years of patient ageing.

We tasted 12-, 20- and 25-year maturations side by side, which made the differences in texture, sweetness and concentration very clear.

A familiar ingredient becomes something completely different when you experience it where it is made and understand the time behind every bottle.
