Highland Cheddar is the most popular and well known of our complete cheese range. In addition to our cheeses we also produce milk, yoghurt, ice cream and ghee. Proudly artisan, all of our cheese is produced by hand and in small batches, with particular attention paid to t

he tradition of the cheese maker's art. We are proud that we use as little mechanisation as possible in the production of our cheese. We are passionate about our products and have a heritage of always putting quality first, a principle which continues to guide us to today.

One cheesy fact: Gruyere is named after a Swiss village. It is traditional, creamery, unpasteurised, semi-soft cheese. The natural, rusty brown rind is hard, dry and pitted with tiny holes. The cheese is darker yellow than Emmental but the texture is more dense and compact. Slightly grainy, the cheese has a wonderful complexity of flavours - at first fruity, later becomes more earthy and nutty.
