In honor of yesterday’s eclipse I’d like to give you some lore on me.

My parents are eclipse chasers. I’ve been all over the world to watch the sun disappear. From the sea and on land. I went to Zambia when I was 11, Turkey when I was 16, I’ve been on a boat in the South Pacific, Caribbean, Indonesia and more.

All this to say, if you’ve never seen an eclipse you are missing out. Nothing can be put into words what an experience like this one can be. There are cruises that can take you into the path or group tours to see them from land. Absolutely something to put on your bucket list and something I’d be so honored to help you plan.

I am so excited to sail on the Celebrity Beyond next month. Earlier this year I toured another Edge Class ship and absolutely loved it.

I’ll be spending a week onboard for an educational opportunity and can’t wait to see how adult Melissa likes this vs my previous sailings as a teenager.

I look forward to see what vegan options I can secure on here and spending some quality time in the solarium with my book.

Here’s some of the food we ate on our four night sailing on the Utopia of the Seas.

On this trip we skipped the Main Dining Room and opted for dinner at Izumi Sushi, Royal Railway, and the Windjammer buffet.

This post shows food from all meals, not just dinners. This isn’t everything we ate either as some things I only have video of. 🤦🏼‍♀️

Eating as a vegan onboard Royal Caribbean is super easy, you just need to ask a chef and they’ll accommodate you. We even were able to get a dessert we’ve had on the Wonder of the Seas just by explaining it and asking if it was something they could do (the whipped cream strawberry cup you see). Huge thank you to Chef Stacylee and Chef Vinroy at the Windjammer for making us feel so special all week.

This season is my absolute favorite at Universal. I love having the frequent fear for myself to enjoy the event all season long and also to make sure I can help you make the most of your single night visit.
