I recommend Disney’s Coronado Springs Resort to my clients for many reasons, and I just added a new one to my list. You can get large gluten free Mickey waffles at El Mercado de Coronado, the quick service restaurant at the resort.

My daughters told me they were not leaving Miami this week without trying Banana Daddy. Banana Daddy has GF/DF soft serve made from bananas, sundaes, smoothies, baked goods and coffee, and it is 100% gluten free. We all got their amazing Gimme S’More sundae with toasted marshmallow, graham cracker crumbs and chocolate chips. We also bought a cinnamon roll to take home and eat for breakfast this morning. It was so good!

My new favorite breakfast is a simple yogurt parfait without granola. I prefer to buy whole milk plain yogurt, but do not love the taste. With the addition of some fresh fruit and my favorite jam though, it is amazing.

We had baked feta pasta for dinner tonight. What did you have for dinner?

Baked Feta Pasta

Ingredients
2 containers sugar bomb tomatoes
1/2 C extra virgin olive oil
Sea salt, coarse ground black pepper, red pepper flakes
1 block of feta (8 ounces)
2 tsp minced garlic
1 pound of pasta cooked according to package directions (we used Rummo gluten free penne)
Fresh basil
Shaved Parmesan

Preheat oven to 400 degrees.

In a large baking dish, toss the tomatoes with olive oil, then add salt, pepper, and red pepper flakes to taste. Place the feta block on top of the tomatoes, then add a drizzle of olive oil and black pepper. After baking for 20 minutes, remove the baking dish from the oven and stir the garlic into the tomato mixture without disturbing the feta. Bake for 20 more minutes. Stir the feta into the tomatoes and top with fresh basil. Check the seasoning level and add more salt and/or pepper if needed. Combine with a pound of cooked pasta and top with shaved Parmesan.
We bought a rotisserie chicken to add to the pasta, but we ate it before dinner. 😂 Another easy way to add protein would be to stir in a can of white beans when you add the garlic.

My daughters are cooking their way through some our favorite recipes in their new apartment. They recently made Giada’s recipe for Turkey and Spinach Taquitos. I will post a link in the comments. We add a lot of extra cheese on top and only cook them for 15 minutes. They are great served with salsa. What did you have for dinner tonight?

Today is the one year anniversary of my first gluten free group trip to Europe! My daughters and I had an amazing time in Ireland with a great group of people. Ireland was beautiful, we ate well, and made lifelong friendships. My next group trip is a 10-night trip to Madrid, Sevilla and Barcelona in October. Reach out for more information if you are interested in joining us. 2027 is still undecided at this point. I have not ruled out Portugal or possibly even Italy.

Last night, we had dinner at Toledo - Tapas, Steak & Seafood, a table service restaurant at Disney’s Coronado Springs Resort. It is one of our favorite table service restaurants at Walt Disney World.
