The last night we were on Hilton Head Island, we ate at Nunzio, one of our favorite restaurants. I loved my panna cotta, but my appetizer and entree were not great. Last year, I did not have a great experience at Truffles Cafe on the island, but we stopped at their restaurant in Bluffton on our way off the island and had a great meal. As soon as we entered Whole Foods today, my daughters took off for parts unknown. When they reappeared, they had insulated bags full of Feel Good Foods products. We bought our favorite Chicken Soup Dumplings and Pork Pot Stickers, and the new Crispy Chicken Bites, which we made for dinner tonight. They were very good, and the sauce they come with is amazing, though probably a tad spicy for a lot of people. I used the sauce for dipping my chicken and the fries we made. Have you tried the new crispy chicken bites?

We had waffles for breakfast this morning. I always use Josie's Best Gluten Free waffle mix, which is top 8 free and made in a top 8 free allergen free facility. We substitute melted unsalted butter for oil and add vanilla extract. I am a Mickey waffle girl, but my family prefers Belgian waffles. Which one would you choose?

CELIAC MYTH - People with celiac disease can go to Europe and safely eat products with wheat.
✨This is false!

A “doctor” with a whole lot of followers posted a fancy slide show on Instagram and Facebook about European wheat earlier this week. He did not mention in his slides that people with celiac disease should not eat gluten in Europe. I called him out on it and so did others. He then edited his post to mention “celiac’s disease” then edited it again when I taught him how to spell celiac disease. He then blocked me on Instagram. 😂 Hopefully he will edit his Facebook post, which he still has not done. Europeans with celiac do not eat gluten.

Spur of the moment this morning, I decided to drive to Hilton Head Island to join my family. I made it just in time for dinner at Poseidon. For years, I have ordered their amazing fried clams, but they are off the menu. I had fried flounder and french fries. I do not think we will be returning anytime soon. No one was too excited by their meals. My fries were great but the fish was not good.

We had baked feta pasta for dinner tonight. Have you tried it?

Baked Feta Pasta

Ingredients
2 containers sugar bomb tomatoes
1/2 C extra virgin olive oil
Sea salt, coarse ground black pepper, red pepper flakes
1 block of feta (we purchase ours from Trader Joe’s)
2 tsp minced garlic
1 pound of pasta cooked according to package directions (we used Rummo gluten free rigatoni)
Fresh basil
Shaved Parmesan

Preheat oven to 400 degrees.

In a large baking dish, toss the tomatoes with olive oil, then add salt, pepper, and red pepper flakes to taste. Place the feta block on top of the tomatoes, then add a drizzle of olive oil and black pepper. After baking for 20 minutes, remove the baking dish from the oven and stir the garlic into the tomato mixture without disturbing the feta. Bake for 20 more minutes. Stir the feta into the tomatoes and top with fresh basil. Check the seasoning level and add more salt and/or pepper if needed. Combine with a pound of cooked pasta and top with shaved Parmesan.

When I became a travel planner, I specialized in all things Disney. We are Walt Disney World passholders and dine there once or twice a week. We also love to visit Disneyland, have taken 18 Disney cruises, and have been to Aulani and Disneyland Paris. Four year later, the majority of my business is cruises, and I book all major cruise lines. I also plan custom trips to Europe and recently branched into gluten free group trips to Europe as well. I am hoping my vendors will have 2026 quotes for me by the end of the month for Ireland in July and Spain in October. My other page got a little facelift today with some photos from Italy.
