Prior to the dominance of 'Cร  phรช phin'- coffee prepared in a filter or 'Cร  phรช mรกy' - machine coffee on the market, people in Saigon often used a fabric bag to purify the coffee. This type of coffee style is no longer commonly seen among younger generations. The fabric bag is filled with ground coffee, then dipped in the clay pot and stirred several times with a spoon. After that, people cover the lid on and โ€œcookโ€ the coffee about five to ten minutes until it can be served for your customers. Making coffee in this way always keeps the coffee purity and fresh.
