Our Off-Season keeps rolling on. In this case, with a pair of adventurous chefs doing some R&D in the Basque Country.

These chefs opted for one of our City Walk + Pintxos tours - moving away from the often-trodded Parte Vieja and into lesser known neighborhoods.

This might be some of the best research and development experiences to have around the globe!

From Big Sky Country (a.k.a., the state of Montana, USA), this intrepid gang of culinary explorers sampled a spectrum of delicious dishes in a relaxed, uncrowded off-season atmosphere.

Whether it was yummy hake with pig ear sauce, soul-warming sopa de ajo, or in-season local cider - the experience was memorable and deeply satisfying.

Panceta a Baja Temperatura - slow-cooked, succulent pork belly drizzled with a citrus-peanut sauce resting over fresh hummus. Yes, the Basque Country has its traditional dishes, but they also excel at creative variations. Sooooo good.
