"Για να μπορέσει κανείς να κατανοήσει σε βάθος, τι σημαίνει "οινοποίηση με ήπιες παρεμβάσεις", βιοδυναμική καλλιέργεια, ωρίμαση σε πήλινους αμφορείς , θα πρέπει να δει ιδίοις όμμασι τον "τόπο του εγκλήματος", ν' ακούσει σε απευθείας μετάδοση τον δημιουργό να απαγγέλει τα πάθη του και τις προσωπικές του ιστορίες."
