Go to Mérida for the botana.

You sit down in a cantina, you order one beer, and the food starts showing up. Nobody handed you a menu. A plate lands, then another, and right when you figure that was the last one, here comes something else. Half of it you will not recognize. All of it belongs to Yucatán and nowhere else.

Most of our guests end the tour, go back to the hotel, and open their notes app. They write down names. Addresses. Dishes they want to find again. Sometimes a line someone said that they're still turning over a week later.

Fifty years, the same recipes, and the food still never tastes the same twice.

At El Caguamo, a metal stand in Centro, three brothers cook what their father started. Nothing on paper changed. The hand does: same recipes, different brother, different flavor.

We finally wrote the whole story down, the parents who built the stand and the tostada that exists because of the groups we keep bringing. It's on the blog now.

The original comes out of the ground. In Yucatán, the pork is wrapped in banana leaves, seasoned with achiote and sour orange, and cooked in a pib, a Maya earth oven sealed with hot stones.

"Pibil" means buried in Maya. The dish is named after the hole it's cooked in, and the oven is older than the dish itself: the technique was there centuries before the pork arrived.

On our Mérida market tour, guests have eaten it, asked where to find it again, and come back to Mérida just for it.

We have not found a better version.
