Oeuf cocotte (egg stored overnight with truffle, and baked in butter and heavy cream)...the best of all options for really bringing out the truffle flavor. This Périgord was from James Michael Riggan and Elora.

I ran a taste test on slivers of truffles from four different orchards, ladling hot broth onto each and steeping for five minutes, then tasting, right down to the last drop. L-R: KY T. melanosporum from Margaret Townsend; NC T. melanosporum from James Michael Riggan; NC T. melanosporum from Warren Wilson College; NC Imaia gigantea from Natalie & Luke Dechiara at Wild Goods. Each had its own personality, each delicious.

After a weekend of truffle indulgence, I return to the basics to balance things out...but there's no reason why I shouldn't shave a bit of leftover Blue Ridge truffles on my plate just before serving! This is the first in a series of pieces for Smoky Mountain Living Magazine, thanks to editor Jonathan Austin. Stay tuned for the next contribution of items to pile in your spring foraging basket, and what to do with them...

There comes a time, as winter grows old, when you just want to throw everything left over in your pantry in a pot and let it work its own magic, while you go off in search of the first wild greens that might be popping up in some sheltered corner.
