French toast, bacon, and of course coffee to wrap up our last morning at camp. ☕🥓🍞

We’re all packed up now, but we’re not quite ready to leave yet. Going to hang out at camp a little longer and enjoy the beautiful weather before we head home.

And last night gave us one more reason to linger—the stars were absolutely spectacular. ✨🌌 One of those clear mountain nights where you just have to stop and look up.

We ended up only getting rain that first night, so our “rainy camping trip” turned out to be a little less rainy than expected. 😂 Still, we got to test the camper in the rain, enjoy some cooler weather, eat VERY well, and settle into our new setup a little more.

Pretty successful first real adventure with the new camper! 🏕️

🍔 Dinner update from camp!

Tonight’s menu was smash burgers with bacon, grilled onions, and toasted Texas toast — and apparently they were way too good to wait for a photo. 😂

They sounded good. They looked good. They smelled AMAZING.

And then we promptly gobbled them down and realized… we forgot to take a single picture. 🤦‍♀️

So you’ll just have to trust us on this one. They were every bit as good as they sound!

One of my favorite little finds at our campsite. ❤️

Someone left these hand-painted rocks tucked around the site, and I love that the scenery here inspired them to create a little artwork and leave it behind for someone else to discover.

Mountains, trees, Colorado colors, and even a few fun characters. 🎨🏔️🌲

It’s pretty cool to think about the people who camped here before us, enjoying the same views and finding their own way to leave a little piece of their adventure behind.

Well, this feels very Colorado. 😂❄️

After breakfast, we took a quick hike and caught a view of fresh snow on the backside of Pikes Peak! Yep… snow. In August.

Between the rain last night, the cooler temperatures, and now seeing snow on the high peaks, this little camping trip is definitely delivering the less-than-perfect-weather test we were hoping for. And honestly, we’re loving it.

Not a bad view for a quick after-breakfast hike! 🏔️🥾❄️

Rainy camping mornings call for biscuits & gravy! ☕🥂🏕️

This morning we put the Coleman oven to work and baked biscuits to go with hot sausage gravy. I have to say, fresh biscuits from a little camp oven are pretty hard to beat!

Of course there was coffee. Because camping without coffee isn’t happening. 😂

And since we’re in no hurry to go anywhere, we added mimosas made with my absolute favorite sparkling wine—Hula O Maui from MauiWine. 🥂🌺 A little taste of Maui on a cool Colorado morning!

It did rain last night, and it turns out that was one of the best parts. The sound of the rain hitting the camper roof was incredibly relaxing and made it very easy to doze off. 🌧️😴

So far, testing out the new camper in less-than-perfect weather is going exactly as we’d hoped: good food, cozy shelter, rain on the roof, and absolutely nowhere we need to be.

I think we could get used to this. ❤️🏕️

Camp is officially set up and dinner is done! 🏕️🔥

Setup took us about 20 minutes this time, which we’re pretty happy with considering we’re still learning the routine. We can already tell it’s going to get quite a bit faster once we’ve done it a few more times and everything becomes second nature.

Dinner tonight was chicken, bell pepper and onion kabobs with corn on the cob, and that corn was ridiculously good. 🌽 We’re seriously wishing we had brought another ear… or three.

So far, the cooler, rainy-weather camping experiment is treating us pretty well. Camp is cozy, dinner was excellent, and we’re settling in for the evening.

Now we’ll see what the weather decides to throw at us tonight. 🌧️

Apparently we’ve reached the stage of camper ownership where rain and cooler weather sound less like a problem and more like a good test. 😂🏕️

We’re heading out this afternoon for a couple of camping days, and the forecast is looking pretty wet and chilly. And weirdly… we’re actually looking forward to it.

The new camper did great on its first trip, but this time we get to see how it handles less-than-perfect weather. We’ll be putting the walls up on the awning for the first time, which will give us a nice protected outdoor space, and since a regular campfire isn’t possible due to the current fire restrictions, we’ve got the Ignik Skullet ready to fill in as our cozy substitute fire. 🔥

And if the rain really settles in? We’re not exactly roughing it. 😂 We’ve got good food, good drinks, plenty of board and card games, and a 52” projector screen inside if we decide a rainy-night movie is the way to go. 🎬🍻🎲🃏

Honestly, a couple of cool, rainy days, just the 2 of us tucked into camp with nowhere we have to be sounds pretty damn good.

Adventure doesn’t always need blue skies. Sometimes it’s about seeing just how comfortable you can make camp when Mother Nature decides not to cooperate.

We’ll let you know how the Atlas Outdoors Appalachian X handles its first real dose of rainy Colorado camping weather!

One last post from this adventure! 🏕️

We started the morning the right way with cinnamon rolls baked in the Coleman oven and a fresh cup of French press coffee. There are definitely worse ways to end a camping trip.

After several days of putting our new Atlas Outdoors Appalachian X through its paces, we can honestly say it didn’t disappoint. It’s everything we hoped for… and then some. Every trip teaches you a few things, and we’ll probably rearrange a couple of items before the next adventure, but overall we couldn’t be happier with our new home on wheels.

We packed up camp and were on the road around 11:30 this morning. One thing that really stood out was how quick and easy camp breakdown was. It’s always nice when the last morning of a trip is as relaxing as the first.

Now it’s time to head home, unpack, and start planning the next adventure. Thanks for following along with us on this trip—we can’t wait to share where the Appalachian X takes us next!

Some camping memories are planned… and some just happen.

Tonight’s dinner was about as simple as it gets—bacon cheeseburgers and macaroni salad around camp. I happened to glance to my right and thought, “That’s a pretty cool-looking tree stump…”

Then I looked again.

“Wait… is that a deer?”

HOLY SH*T… IT’S A MOOSE! 🫎

Needless to say, dinner took a back seat for a few minutes. Seeing a moose this close, completely unexpected, is one of those moments you never forget and easily the highlight of this trip so far.

Sometimes the best part of camping isn’t the destination or even the food… it’s the wildlife that decides to stop by.
